Located on Via Mercato, in the heart of Milan, the new Panini De Santis venue reinterprets the brand’s identity through a refined architectural language that combines functionality, craftsmanship, and material quality, in line with the design approach developed by Paloma Architects.
The renovation of the 125-sqm space, previously dedicated to food and beverage service, is driven by a careful reorganization of the layout aimed at improving workflow efficiency and enhancing the overall experience for both staff and customers. Service areas have been reconfigured to minimize operational overlap, with an enlarged storage space accessible from Via San Carpoforo, a reorganized washing area connected directly to the counter, and upgraded staff rooms and facilities, renewed in finishes, furnishings, and systems while preserving their original geometry.
Acting as the project’s focal point, the curved counter facing Via Mercato welcomes visitors and defines the public interface of the space. Designed as a balance between aesthetics and performance, it supports food preparation while functioning as an extended display and social hub.
Beyond the counter, the dining area unfolds as a vibrant and tactile environment. Custom marble tables, upholstered benches, and a mix of seating options create a relaxed yet curated atmosphere. Light-toned, textured wall finishes are paired with green wooden boiserie, enriched by bronze details and accentuated through a carefully calibrated lighting design that highlights the bespoke nature of the interior.
Complementing the architectural intervention, the building systems have been fully upgraded to ensure optimal indoor comfort. A heat pump air-conditioning system with inverter technology and VRV distribution, combined with space-specific air diffusers, provides efficient climate control while maintaining acoustic comfort and a uniform air distribution throughout the venue.
